GIANT BAKED PORK & MOZZARELLA BALLS WITH MASH

This is one of those meals that just makes you happy. Giant meatballs stuffed with grated carrot, onion, and mozzarella baked in a cherry tomato and basil sauce, and topped with more mozzarella... All served on mash. Smile :-)

30 Minutes. Free Range. A NEW Family Favourite. 

Serves 2.

Ingredients
350g free range pork or chicken mince
1 carrot
1 brown onion
2 garlic cloves
1 tin cherry tomatoes
500g dirty potatoes
2 sprigs basil
150g shredded mozzarella

Preheat oven & prepare mash
Preheat oven to 200ºC on fan bake. Grate the carrot. Finely dice the onion. Crush the garlic. Wash and peel the potatoes then cut into 2cm cubes. Place potatoes into a pot of cold water. Cover and bring to the boil. Reduce to a simmer and cook for 12 minutes until soft. Drain potatoes and place back into the pot. Add butter (not provided) and season to your taste. Mash until desired consistency.

Make meatballs
While the potatoes are cooking, combine chicken mince, carrot, HALF the onion, HALF the cheese, salt and pepper. Wet hands and roll into even large golf balls. Place into a lightly oiled deep baking dish. Place on middle rack in oven for 10 minutes.

Cook meatballs
Heat a drizzle of olive oil in a fry pan to a medium heat. Add remaining onion, garlic and a pinch of sugar (optional, not provided). Sauté for 2-3 minutes. Add tinned tomatoes and season with salt and pepper. Reduce to simmer. Once the meatballs have been cooking for 10 minutes, pour some sauce over each ball. Sprinkle remaining cheese over. Place back onto middle rack for 10 minutes. Remove tray and set aside. 

To serve
Plate mash potato into deep plates or bowls and top with meatballs. Stir basil leaves through sauce then spoon over.
