This quick and simple recipe gives you that slow cooked finish in under half an hour... Combining a rich lamb mince ragu with fluffy pillows of gnocchi and loads of parmesan cheese, this is classic Italian cooking at its simple best. 

30 Minutes. Perfect For Adults & Kids.

Serves 2.

350g lamb mince
1 pack gnocchi
1 brown onion
1 garlic clove
50g tomato paste
2 tomatoes
1/2 tablespoon dried oregano
1/2 tablespoon balsamic vinegar
Grated parmesan (to your taste)

Cook gnocchi & prepare vegetables
Bring a pot of salted water to boil. Finely dice onion and tomatoes. Crush the garlic.

Cook lamb & gnocchi
Heat a large fry pan to medium to high heat with a good drizzle of olive oil. Add onion and garlic. Cook for 3-4 minutes until softened. Increase heat to high and add mince and tomato paste. Cook until browned, breaking up lumps as it cooks. Add the tomatoes, oregano and balsamic. Stir well. Reduce to a simmer. Add the gnocchi to the boiled water. After 2 minutes, they should begin to rise to the top. Scoop out as they rise and put straight into the sauce. Reserve the pot water. Add 1/4 cup water from the gnocchi pot to the sauce. Season with salt and pepper. Cook for 2-3 minutes at a simmer. 

To serve
Serve into bowls and finish with parmesan cheese.
