A winner for dinner to be sure... to be sure. This 30 minute Irish stew packs the good stuff. From beef mince meatballs to chunky stewed carrots and colcannon mash made from potatoes and kale. All finished with a mouthwatering gravy.

30 Minutes. Gluten Free. Sugar Free. Dairy Free.

Serves 2.

400g beef mince
1 natural beef stock cube
2 carrots
450g dirty potatoes
2 stems kale
1 spring onion
3 sprigs parsley

Make meatballs
Finely chop parsley. Finely slice the spring onions. In a bowl, combine beef mince, HALF the spring onion, HALF of the parsley, salt, pepper and combine well. Roll mince into small golfball sized balls. Wet hands to stop the mince sticking!

Make mash
Fill 3/4 of a large pot with water, add a generous pinch of salt. Cover and bring to the boil. Peel potatoes, rinse and cut into bite sized pieces. Once the water is boiling, add potatoes. Cook for 15 minutes.  Remove the kale leaves from the stems. Finely chop the leaves. Add to the cooking potatoes for the last 2 minutes. Drain and place potatoes and kale back into the same pot. Add remaining spring onions to the pot with a generous knob of butter (to taste, not provided) and season with salt and pepper. Mash to desired consistency. 

Cook meatballs and make mash
Dissolve stock cube in 1 cup hot tap water. Peel carrot and slice into 0.5cm rounds. Heat a drizzle of olive oil in a fry pan to medium to high heat. Brown meatballs on all sides until golden. Add stock and carrots and reduce to a simmer. Cook for 5 – 6 minutes until the liquid thickens and the carrots soften. Season with salt and pepper.

To serve
In a shallow bowl place mash, top with carrots, meatballs and gravy. Finish with remaining parsley.
