BAKED CHICKEN PARMIGIANA & GARDEN SALAD

You can't beat the classic flavour combination of a parmi.  We’ve made ours a little healthier with free range chicken breasts baked in the oven with two cheeses and a mixed leaf and green bean side salad. 

30 Minutes. Just 368cal Per Serve. A Healthy Family Favourite.

Serves 2.

Ingredients
2 x 160g free range chicken breasts
1 clove of garlic
1 tin chopped tomatoes
1/2 tsp white sugar
2 sprigs of basil
1/3 cup mozzarella
1/3 cup grated parmesan
120g green beans
70g mixed leaf
1 lemon
(olive oil, butter, salt & pepper not included) 

Preheat oven & make sauce
Preheat the oven to grill, set on 200ºC. Place the rack on the middle shelf in oven. Place a saucepan over a medium heat, add a drizzle of olive oil and cook crushed garlic for a few seconds. Then add tinned tomatoes, sugar and a generous pinch of salt and pepper. Stir and simmer on a low heat for 5–7 minutes until the tomatoes start to breakdown. Add roughly chopped basil leaves and remove from the heat.

Cook chicken
Heat a fry pan on medium to high heat, add a drizzle of olive oil and sear each side of the chicken for 2 minutes until golden. Transfer to a lightly oiled or lined baking dish, then top with the sauce, cheeses and drizzle with olive oil. Place into the oven to bake for 15 minutes until the cheese is bubbling and melted.

Make salad
While the chicken is cooking, bring a pot of salted water to the boil. Top and tail the beans and add to pot. Blanch for 1 minute once the water is boiling. Drain, rinse under cold water and place in bowl. Combine the cooled green beans, mixed leaves with a drizzle of olive oil and lemon juice. Season well and toss to combine.

To serve
Place golden parmi on the plates with a pile of the crisp green salad.
