2 x 200g free range chicken breast
1 free range egg
1/2 cup breadcrumbs
1 teaspoon dried garlic mix
1/3 cup grated parmesan
2 sprigs fresh thyme
500g dirty potatoes
140g green beans
Preheat the oven grill, set on 220ºC. Shallow fried method can be used as an alternative.
Peel and cut potatoes into 2cm chucks. and place them into a pot of cold water. Cover and bring to the boil then reduce to a simmer for 10-15 minutes until soft. Drain potatoes and place them back into the pot. Add butter and season to your taste. Mash until desired consistency.
Make breadcrumb mix
Combine breadcrumb mix and fresh thyme leaves (discarding the stems), grated parmesan, salt and pepper into a large bowl.
Lightly beat eggs into a bowl and dip each piece of chicken firstly into the egg and finally into the breadcrumb mix.
Drizzle or spray olive oil on both sides of chicken schnitzel. Place on bake tray in oven. Grill on middle shelf for 5 minutes each side.
Using your kettle, bring water to the boil. Trim the ends of the beans. In a medium sized pot pour the boiled water from the kettle and blanch the beans for 4-5 minutes on a high heat. Drain and place in a bowl and while beans are still hot, squeeze over a little lemon and a drizzle of olive oil. Season lightly and toss to combine.
Place mash on plates with beans, schnitzel and a wedge of lemon.
