Garlic, prawns and spaghetti… a classic combination that works. What’s great about this dish is that you can pull it together in just 20 minutes. We've added seasonal broccolini for that winter green kick.

20 Minutes. Sugar Free. So Quick & So Easy.

Serves 2.

250g Aussie prawns
250g spaghetti
6 stems broccolini
2 cloves of garlic
1/2 teaspoon chilli flakes (optional)
1 lemon
3 sprigs parsley
40g shaved parmesan

Cook spaghetti & broccolini
Fill a large pot 3/4 full of water and bring to a rapid boil with a tablespoon of salt. Trim the ends of the broccolini and half each stem length ways. Once the water is boiling, add the spaghetti, stirring frequently for a minute and bring back to the boil. Cook for 8 minutes from the time the pasta begins to boil, adding broccolini for the final minute of cooking time then drain.

Cook prawns
While the spaghetti is cooking, heat a large fry pan over a medium heat with enough olive oil to cover the base. Add chilli flakes (optional), zest of the lemon, finely chopped garlic and prawns. Stir and cook for 2 minutes until the prawns have changed colour. Add drained broccolini and pasta and toss to combine. Lastly, top with finely chopped parsley and stir to combine.

To serve
Plate into bowls, sprinkle with parmesan and serve with lemon wedges.
