ROAST PORK WITH KALE & WHITE BEANS 

Premium grade lean pork tenderloin glazed in honey, rosemary, thyme and garlic... Matched with white beans and kale for a satisfying, healthy and quick to make dinner. Deliciously healthy.

 30 Minutes. Gluten Free. Sugar Free. 

Serves 2.

Ingredients
300g pork tenderloin
2 cloves of garlic
1 sprig of rosemary
1 sprig of thyme
1 tablespoon honey
4 stems of kale
1 brown onion
1 tomato
1 x 400g cannellini beans

Pre heat oven
Arrange the shelf rack in the center of the oven and heat to 200ºC.

Marinate, sear & cook pork
In a bowl, combine half of the provided garlic (crushed), finely chopped rosemary, thyme, honey, a generous pinch of salt and a drizzle of olive oil. Add the pork and coat to marinate. Allow to rest for 5 minutes. Heat a fry pan or baking tray over the stove top on a medium heat, add 1 tablespoon of olive oil and sear each side of the pork for 2 minutes to get a crust. It will smoke so open a window! Place pork on a bake tray in oven for 10 minutes. Remove and rest uncovered for 2–3 minutes before slicing.

Prepare kale & white beans
Remove the kale from the stems and roughly chop. Crush the remaining garlic and roughly chop the tomato. Peel and finely dice onion. Drain and rinse the cannellini beans. Heat a medium-sized saucepan on a medium heat with enough oil to cover base. Sauté the onion and garlic until it has softened. Add kale and tomato and cook, stirring until the kale has wilted. Stir through the cannellini beans, heat and season generously with salt and pepper.

To serve
Once rested, slice pork into 1cm strips. Place kale and white beans on plate and top with the pork.
