GREEK BBQ CHICKEN SKEWERS WITH GREEN BEAN, TOMATO, OLIVE AND FETA SALAD

BBQ chicken skewers marinated in a mixture of herbs, lemon and olive oil served with our version of a striped back Greek salad. Simple, seasonal and super delicious.  We even give you the skewers!

30 Minutes. Gluten Free. Sugar Free.

Serves 2.

Ingredients
400g free range skinless chicken thigh
2 cloves of garlic
2 sprigs oregano
1 lemon
4 bamboo skewers
250g green beans
3 tomatoes
10 kalamata olives
125g Australian feta
1 tablespoon red wine vinegar

Soak BBQ skewers & marinate chicken
Add water to your sink and soak the bamboo skewers provided. Cut chicken into bite size pieces approx. 2.5cm cubes. In a bowl, combine the chicken with crushed garlic, finely chopped oregano (destem), juice and zest of half the lemon, some olive oil, salt and pepper. Set to one side for 10 minutes.

Make salad
Fill kettle and bring to the boil. Pour boiled water into medium sized pot and bring to the boil with a generous pinch of salt. Top and tail beans and blanch in boiling water for 2-3 minutes. Drain and rinse under cold running tap water. Once cool, cut each bean diagonally, in half and add to a bowl. Set to one side. Quarter each tomato and remove seeds, then slice lengthways into strips the same width as the beans. Combine with beans and olives.

Cook skewers
Place your BBQ or a griddle pan on a medium heat. Thread each piece of chicken on skewers until you have even sized skewers (2 per person). Cook on each of the 4 sides for 3 minutes. Remove when cooked and drizzle with the juice of the remaining lemon.

To serve
Finish salad by crumbling over with feta and dressing with red wine vinegar, a drizzle of olive oil, salt and pepper. Place two skewers on each plate with the tossed salad.
