GRASS FED ANGUS SIRLOIN WITH KUMARA MASH AND GREEN BEANS

Always wanted to cook a restaurant quality steak at home? Here’s your chance... We source the very best grass fed angus sirloin from Cape Byron and pair it with a deliciously nutritious sweet potato mash and local green beans, hand picked fresh from the markets.

30 Minutes. Gluten free.

Serves 2

Ingredients
2 x 200g Cape Byron angus sirloin steaks
500g kumara
150g green beans
1 tablespoon capers
1/2 tablespoon dijon mustard
1/2 tablespoon red wine vinegar

Prepare mash
Peel and cut kumara into 2cm chucks and place in a pot of cold water. Cover and bring to the boil then reduce to a simmer for 10-15 minutes until the kumara is soft. Drain and place back into the pot. Add butter or olive oil to your taste and mash. Season with salt and pepper.

Cook steaks
While the kumera is cooking, heat a heavy based griddle pan or fry pan to hot (not smoking hot). Cook for 3.5 minutes on each side for MEDIUM RARE and 5 minutes on each side for WELL DONE. Remove steaks from the pan and loosely cover with foil for   2 - 3 minutes to rest.

Prepare beans
While the steaks are cooking, using your kettle bring water to the boil. Trim the ends of the beans. Place beans in a heatproof bowl pour over the boiled water and blanch for 2 minutes. Drain and rinse with cold water to refresh. Lastly, while the steak is resting prepare dressing; finely chop the capers and combine with premixed vinegar & mustard dressing into a bowl with a drizzle of olive oil and whisk to combine. Toss through the beans.

To serve
Place mash on plates with the bean salad and steak.
