SUMMER BOLOGNESE WITH CHERRY TOMATOES, OLIVES & BASIL

It’s quick, easy, full of summer flavours and seasonal produce yet still has that cozy meal feeling you love! Unlike any bolognese you’ve ever made before, our summer version features premium lean beef mince and spaghettini (a light spaghetti) topped with cherry tomatoes and olives dressed in freshly squeezed lemon juice... OMG!!

20 Minutes. Don’t even hesitate.

Serves 2.

Ingredients
300g premium beef mince
250g spagettini
2 cloves of garlic (finely chopped)
1/2 tablespoon dried oregano
12 cherry tomatoes
2 tablespoons tomato paste
10 kalamata olives
2 sprigs fresh basil
2 tablespoons grated parmesan
1 lemon

Cook pasta
Fill a large pot 3/4 full of water and bring to a rapid boil with a tablespoon of salt. Add pasta, stirring frequently for a minute and bring back to the boil. Then cook for 4 minutes from the time the pasta begins to boil. Check it is al dente and drain. Reserve 1/3 cup of pasta water for cooking mince.

Dress tomatoes
While the water is coming to the boil, in a bowl combine halved cherry tomatoes, olives, juice of the lemon, a drizzle of olive oil, salt and pepper to taste. Set aside.

Cook bolognese
Heat a non-stick fry pan over a medium heat with enough oil to cover the base. Add mince and cook until browned, breaking up any lumps as it cooks. Next add crushed garlic, dried oregano, tomato paste, salt and pepper. Stir well to combine and cook for a further 2 – 3 minutes. Lastly add the reserved pasta water, cover and reduce to a simmer for a further 3 minutes.

To serve
Place spaghettini onto a platter and top with mince, tomatoes, olives and the remaining juice from the bowl. Finish with torn basil leaves, parmesan and a drizzle of olive oil.
