This Cantonese-style dish combines free range chicken tenders with market fresh Chinese broccoli, soy sauce and oyster sauce. But its the fresh ginger that is the star of this dish. So don’t settle for a dodgy takeaway this week. Cook this brilliantly simple, healthy and delicious dish in less than 30 minutes.

30 Minutes. Free Range. Dairy Free. So Good.

Serves 2.

400g free range chicken tenders
4cm ginger
2 cloves of garlic
1 long red chilli
1 spring onion
1.5 tablespoons oyster sauce
1/2 tablespoon soy sauce
1/2 tablespoon rice wine vinegar
1/2 teaspoon sugar
200g Chinese broccoli
3/4 cup long grain rice

Cook rice
Using absorption method, cook rice. Place the rice in saucepan with 1.5 cups cold water. Bring to the boil until liquid is completely absorbed and air bubbles have formed. Cover pot, remove from heat and set aside minimum 15 minutes. Fluff with a fork to serve.

Prepare stir fry
While the rice is cooking, peel and grate the ginger, crush the garlic and finely slice the chilli and spring onions on an angle. Rinse Chinese broccoli thoroughly and then cut into approx. 5cm length pieces. Cut chicken into large bite size pieces.

Cook stir fry
Heat a wok or medium-sized fry pan over a high heat. Add enough oil to cover base. Add chicken and stir fry for 2-3 minutes until lightly browned. Add ginger and garlic, fry for 1 minute. Add premixed sauce, chilli to taste and fry for another minute. Finally, add Chinese broccoli cooking until wilted. Remove from heat.

To serve
Place rice in bowls and top with chicken and sprinkle with spring onion.
