FREE RANGE CHICKEN KIEV WITH BEANS & BROCCOLINI

Bring retro back to your dinner table with the 70's classic, Chicken Kiev. Our version stuffs free range chicken breasts with Philadelphia, garlic and parsley then crumbs and cooks them until golden and crispy... you know it’s going to be good. 

20 Minutes. Free Range. Groovy.

Serves 2.

Ingredients
2 x 180g free range chicken breast
3/4 cup breadcrumbs
2 free range eggs
6 stems broccolini
150g green beans
1 lemon
2 x 40g Philadelphia cream cheese
3 sprigs parsley
1 garlic clove

Prepare chicken
In a bowl, combine the Philadelphia, crushed garlic, finely chopped parsley, salt and pepper. To make a cavity start with a large, sharp knife. Place chicken flat on a chopping board. Insert knife through the thicker end and push towards thinner end of the breast. Twist the knife slightly to form the cavity. Using a teaspoon, evenly fill each breast with the mixture. Guide it down with your finger. Pinch the end closed. Combine breadcrumbs, salt and pepper in a large bowl. Lightly beat eggs into a bowl and dip each piece of chicken firstly into the egg and finally the breadcrumb mix. 

Cook chicken
Heat a large frying pan to medium high. Add enough olive oil to cover the base. Cook chicken for 4 to 5 minutes each side or until golden. Transfer to a plate lined with paper towel to drain.

Cook vegetables
Fill a kettle with water and boil. Top and tail beans and cut broccolini in half. Place in a heatproof bowl with a pinch of salt. Pour over boiled water and cover for 3 minutes. Drain then place in bowl. Squeeze over juice of half the lemon, a drizzle of olive oil and salt and pepper. Toss to combine.

To serve
Plate chicken with veg. Serve with a wedge of lemon.
