30 Minutes. A Mexican fiesta for the whole family.
400g premium lean beef mince
8 x 6 inch tortillas
150ml tomato puree
1.5 tablespoons taco seasoning
3 sprigs coriander
1 tin red kidney beans
1/2 cup tasty cheese
Preheat oven and prepare ingredients
Preheat oven to 200ºc. Peel and dice the onion. Rinse and drain the beans and set aside. Roughly chop the coriander.
Cook mince and veg
Bring a large non-stick fry pan to a medium to high heat with a good drizzle
of olive oil. Sauté the onion for 2 – 3 minutes until soft. Add the mince and taco seasoning. Cook for a further 4 – 5 minutes, breaking up the mince as it browns. Season with salt and pepper. Stir through the beans and a ¼ cup of water. Reduce heat and simmer for 2 - 3 minutes until the sauce thickens. Remove from heat.
Spoon mixture in a line down the centre of each tortilla. Roll and place in a greased or lined baking dish. Spoon tomato puree evenly over the tortillas. Sprinkle with cheese. Bake uncovered for 10 minutes or until golden.
Gently lift enchiladas onto plates and finish with coriander.
