BEEF TACOS WITH TOMATO & JALAPENO SALAD

These tacos take just 20 minutes to make but are packed full of flavour! Made with premium Aussie beef mince, hidden veg and served with a crisp salad and soft tortillas. 

20 Minutes. This is a quick dish that everyone will love. Arriba, arriba!

Serves 2

Ingredients

300g Premium Australian beef mince
1 large Carrot
1 Red onion
1 large Tomato
1 Handful mixed leaf
1 Lemon
2 tablespoons Jalapenos
2 tablespoon Taco spice
6 small Tortillas

Cook mince
Peel and finely dice 3/4 of the onion. Grate the carrot. Bring a fry pan to a medium to high heat with a drizzle of olive oil. Sauté the onion for 2 – 3 minutes. Add the carrot and sauté for a further minute. Add the mince and cook for 3 – 4 minutes, breaking up lumps as it cooks. Add the spice mix and 100ml of tap water. Stir well and reduce to a simmer for 6 – 8 minutes. Remove from heat.

Make salad
Dice the tomato. Finely slice the remaining onion. Roughly chop the jalapenos (use amount to your taste). Combine in a bowl with juice of the lemon, mixed leaf, salt and pepper. Set aside

To serve
Heat tortillas in microwave for 30 seconds and divide amongst plates. Spoon meat into a bowl and serve with salad.
