BROCCOLINI & PESTO SPAGHETTI WITH PARMESAN ROCKET SALAD

You just can't go wrong with this delicious vegetarian pasta made with simple, delicious ingredients. Blanched broccolini tossed through spaghetti, basil pesto, walnuts and hot spaghetti.  

20 Minutes. Vegetarian. Cook a restaurant quality meal at home.

Serves 2 

 

Ingredients

1 bunch Broccolini
1 handful Walnuts
1/4 cup Shaved parmesan
200g Spaghetti
150g Basil pesto
50g Rocket
1 Lemon 

Cook pasta & broccolini
Cut broccolini into thirds. Bring a pot of salted water to boil. Cook pasta for 8 minutes total and in the last 2 minutes, add the broccolini. Remove from heat. Reserve a 1/4 cup of pasta water then drain.

Prepare veg & said
Roughly chop the walnuts. Combine rocket with a drizzle of olive oil, half the parmesan, juice of half the lemon, salt and pepper.

Finish pasta
Once the pasta and broccolini are cooked, toss through the pesto,
reserved pasta water and walnuts.

To serve
Portion pasta into bowls and finish with a squeeze of remaining lemon and remaining parmesan. Serve with side salad.
