Turn on the oven and ditch the usual meat-heavy meal and cook this delicious sweet potato, broccoli & kale one tray bake. Finished with cheese and capers.
30 Minutes. Taking loaded fries to a whole new level!
1 small head Broccoli
2 medium Sweet potato
4 stems Kale
1/2 cup Grated cheddar cheese
1 Brown onion
2 tablespoon capers
Preheat oven to 200ºc. Cut sweet potatoes in half lengthways. Place on a lined bake tray with a drizzle of olive oil, salt and pepper. Once oven is hot, bake for 30 minutes until tender.
Cut broccoli into bite sized florets. Peel and finely dice the onion. Remove stem of kale and discard. Finely slice the leaves. Bring a fry pan to medium to high heat with a drizzle of olive oil. Sauté the onion for 2 – 3 minutes. Add the broccoli and sauté for 1 minute. Add the kale to the pan, season with salt and pepper. Add a splash of water and sauté for a further 2 minutes. Remove from heat.
With 10 minutes to go on the sweet potatoes, remove them from the oven. Spoon the sautéd veg over the top of the sweet potatoes. Sprinkle the cheese over and then top with the capers. Place back into the oven for the final 10 minutes. Remove from oven.
Serve onto plates immediately.
