Take your noodle game up a notch with this delicious zucchini noodle stir-fry. Swapping regular noodles for zucchini noodles means you get a healthy, carb free stir-fry. Made with free range chicken mince and seasonal vegetables and finished with a sprinkle of crushed peanuts.
20 Minutes. A potato peeler is all you need to make great zoodles.
400g free range chicken mince
1 cup snowpeas
1 garlic clove
1/2 tablespoon soy sauce
2 tablespoons oyster sauce
1/2 tablespoon rice wine vinegar
1/4 teaspoon honey
1 tablespoon crushed peanuts
Use a potato peeler or zoodler to make zucchini ribbons or noodles. Grate the ginger. Crush the garlic. Peel and grate the carrot. Thinly slice the snow peas on an angle.
Heat wok or pan over a medium to high heat with a drizzle of olive oil. Add ginger, carrot and garlic and stir-fry for 1 minute. Add the chicken and cook for 2 - 3 minutes, breaking up the mince as it browns. Add the soy sauce, oyster sauce, honey and rice wine vinegar. Season generously with salt and pepper then cook for another 30 seconds. Finally, add the zoodles and snow peas. Mix well and remove from heat.
Serve immediately into bowls and top with peanuts.
