EASY CHICKEN PARMY WITH BEANS & MASH

If your family loves a chicken parmigiana or “parmy” as it has become better known, then this is a “must try” recipe. Crumb free, bacon wrapped and oven baked to save you time and a few extra calories.

30 Minutes. An Aussie favourite made easy. Gluten free.

Serves 2.

Ingredients


2 x 180g free range chicken breasts
4 slices streaky bacon
500g dirty potatoes
100g green beans
1/3 cup shredded mozzarella
1 tin tomatoes
2 sprigs basil
2 garlic clove
1 pinch sugar
30g butter
¼ cup of milk

Preheat oven & make mash
Preheat oven to 200ºc. Wash and peel the potatoes then cut into 2cm cubes. Place potatoes into a pot of cold water. Cover with lid and bring to the boil. Reduce to a simmer and cook for 12 minutes or until soft. Drain potatoes and place back into the pot. Add butter and milk (to your taste) and season with salt and pepper. Mash until smooth.

Cook chicken
Wrap 2 slices of bacon around each breast. Lightly spray with olive oil. Place in oven on a lined baking dish for 10 minutes before adding sauce.

Make sauce
While chicken is cooking, heat a drizzle of olive oil in a saucepan to a medium heat. Add the tinned tomatoes and crushed garlic. Season with salt, pepper and a pinch of sugar (optional). Cook on a medium to high heat for 8 minutes. Crush tomato chunks with back of a spoon. Stir through finely chopped basil leaves. Remove chicken from oven and spoon sauce evenly over each breast. Top with mozzarella and season with salt and pepper. Place back in oven for 6 – 7 minutes until melted and golden.

Blanch beans
Bring a small pot of salted water to boil. Top and tail beans. Blanch beans in boiling water for 2 minutes then drain.

To serve
Spoon mash onto plates and top with chicken and remaining sauce. Serve with beans.
