A tasty one-pan stir-fry that's packed with flavour and the good stuff. Made with free range chicken tenders, Asian greens, and egg noodles.

20 Minutes. A winner any night of the week.

Serves 2


350g Australian free range chicken tenders
1 Brown onion
1 bunch Asian greens
1 tablespoon Kecap manis
2 tablespoon Oyster sauce
1 tablespoon Rice wine vinegar
1/4 cup Cashew
2 serves Chinese restaurant noodles or other egg noodles

Prepare chicken & veg
Thinly slice the chicken. Combine in a bowl with a drizzle of olive oil, salt and generous pepper. Peel and thinly slice the onion. Cut greens into 3cm lengths. Halve any thick stems.

Cook noodles
Bring a pot of salted water to boil. Cook noodles for 4 - 5 minutes until just under cooked (or to packet instructions). Drain and rinse quickly under cold water.

Cook stir-fry
Bring a fry pan to high heat with a drizzle of olive oil. Stir fry chicken for 3 – 4 minutes then remove from pan. Using the same pan, stir-fry onion for 1 minute. Add the greens and stir-fry for a further minute. Return the chicken, sauce and cashews to the pan. Stir-fry for 2 minutes. Toss the noodles through for a further minute then remove from heat.

To serve
Serve immediately into bowls.
