GREEK LAMB BOLOGNESE

This dish is a mind blowing Greek twist on a traditional Bolognese. Made with lamb mince, feta cheese, fresh tomato, and kalamata olives and dill to give it a distinctly Greek flavour.

Serves 2 

Ingredients

300g Australian premium lamb mince
75g Feta
2 Garlic cloves
3 sprigs Dill
1 Red onion
2 Tomatoes
14 Kalamata olives
250g Spirali pasta
1/2 cup Natural beef stock 

Prepare veg
Dice the tomato. Crush the garlic. Finely chop the dill. Peel and finely dice the onion. Roughly chop the olives.


Cook sauce
Heat a fry pan to medium to high heat with a drizzle of olive oil. Sauté the onion for 2 – 3 minutes. Add the garlic and mince. Brown mince all over, breaking up lumps as it cooks. Add the tomato and olives. Season with salt and pepper. Stir well then add the stock. Reduce to a simmer for 10 minutes.
Stir through HALF the dill. Remove from heat.

Cook pasta
While the sauce is cooking, bring a pot of salted water to boil. Once boiling, cook pasta for 9 minutes. Check it's al dente then drain. Return pasta to pot. Stir the remaining dill and a drizzle of olive oil through.

To serve
Spoon pasta into bowls and top with sauce. Finish with crumbled feta.
