This Mediterranean salad bowl is loaded with grilled Mediterranean style vegetables, herby free range chicken and finished with olives, sweet cherry tomatoes and a hit of tzatziki. On the table in just 20 minutes.

20 Minutes. Healthy cooking for those of us who love Mediterranean flavours.

Serves 2.

2 x 180g free range chicken breasts
1/2 tablespoon dried oregano
3 tablespoons tzatziki
8 kalamata olives
8 cherry tomatoes
1 small eggplant
2 zucchini
1 lemon

Prepare chicken and veg
Combine chicken in a bowl with dried oregano, a drizzle of olive oil, salt and pepper. Halve the cherry tomatoes and olives. Cut eggplant into 1cm rounds. Cut zucchini into 1cm slices on an angle. Season eggplant and zucchini with a generous drizzle of olive oil and season generously with salt and pepper.

Grill chicken & zucchini
Heat a lightly oiled griddle pan, bbq or large non-stick fry pan to high heat. Grill chicken for 4 minutes on each side. Remove, cover with foil and rest. Next, grill zucchini and eggplant for 4 - 5 minutes each side until charred.

To serve
Grab one bowl per person. Thinly slice the chicken. Arrange the bowls with the olives, tomatoes, eggplant, chicken and zucchini. Finish with a dollop of tzatziki and a squeeze of lemon.
