MOZZARELLA AND BEEF MEATLOAF WITH BABY COS SALAD

Go a little retro this week with these Mediterranean style meatloaves. Packed with premium beef mince, mozzarella and capers. Served with a crisp green, baby cos salad.

30 Minutes. A modern twist on an 80’s classic.

Serves 2.

Ingredients
400g premium beef mince
2 garlic cloves
1/2 cup shredded mozzarella
2 tablespoons capers
2 tomatoes
1 baby cos lettuce
1 Lebanese cucumber
1 lemon


Preheat oven & make meatloaves
Preheat oven to 200ºc. Combine mince with crushed garlic, roughly chopped capers, a drizzle of olive oil and HALF the mozzarella. Season with salt and pepper and combine well.

Take 2 ramekins or a loaf tin and line with a little olive oil. Press mince evenly into ramekins or create a loaf within the tin. Thinly slice one of the tomatoes. Layer on top with remaining mozzarella. Season with salt and pepper then finish with a drizzle of olive oil. Place in your oven on middle rack for 15 minutes.

Make salad
Roughly chop cucumber, baby cos and remaining tomato. Combine in a bowl with juice of the lemon, olive oil, salt and pepper.

To Serve
Remove meatloaves from ramekins and serve on plates with salad.
