Created in the 1890’s and made famous by the Waldorf-Astoria Hotel in New York the Waldorf salad has remained true to the original recipe ever since. Our version has all the key components; roast chicken, walnuts, cos lettuce, apple, celery and a lemon and mayonnaise dressing.

30 Minutes. A timeless classic for good reason.

Serves 2.

2 x 180g chicken breast (skin on)
1 baby gem lettuce
40g mayonnaise
1 lemon
1 green apple
2 stalks celery
1/4 cup walnuts (25g) 

Preheat oven and cook chicken
Preheat oven to 200ºC on fan bake. On a tray, combine chicken, a good drizzle of olive oil, salt and pepper. Mix well to coat. Place tray on middle rack of oven for 15 - 18 minutes until cooked. Remove from oven and rest for 2 minutes.

Make salad
Remove leaves of cos lettuce and wash thoroughly. Finely slice the celery and apple.Whisk together the lemon, mayo, salt and pepper. Toss together in a bowl with the walnuts and half the dressing.

To serve
Slice chicken into 2cm pieces. Divide salad between plates, top with chicken and finish with a drizzle of remaining dressing.
