Each mouthful is an explosion of flavours and textures of spicy beef mince sauce, slippery udon noodles, refreshing cucumber and crunchy shredded carrot.

20 Minutes. A healthy hug in a bowl.

Serves 2

300g Australian premium beef mince
1 Carrot
1 Cucumber
2 Spring onion
1 Brown onion
2 Portions Udon noodles

For the sauce
2 tablespoon Chilli bean paste
1 tablespoon Soy sauce
1 tablespoon Cornflour
1 tablespoon Caster sugar

Prepare veg & boil water
Peel and finely dice the onion. Grate the carrot and cucumber. Finely slice the spring onion. Bring a pot of water to boil.

Cook beef
Mix ingredients for sauce together. Bring a fry pan to medium to high heat with a drizzle of olive oil. Sauté the onion for 2 – 3 minutes. Add the beef and brown all over, breaking up lumps as it cooks for 3 – 4 minutes. Add the sauce and stir. Cook for 30 seconds then remove from heat.

Cook noodles
Cook noodles in boiling pot of water for 3 - 4 minutes or until just cooked. Drain.

To serve
Portion noodles into bowls. Spoon beef over with remaining pan juices. Arrange spring onion, carrot and cucumber on top.
