350g King Dory
1 bunch sorrel
750g dirty potatoes
1 brown onion
2 garlic cloves
1 tub 40g Philadelphia
Preheat oven & make mash
Preheat the oven to 180ºC fan bake. Fill 3/4 of a large pot with water and a generous pinch of salt. Cover and bring to the boil. Peel potatoes, rinse and cut into 2cm cubes. Once the water is boiling, add potatoes and boil uncovered for 15 minutes. Reserve 1/3 cup potato water for later. Drain well, season with salt and pepper, add milk and butter to your own taste. Mash until smooth.
Prepare vegetables & mash
Dice the onion. Quarter and cut carrot into 1cm pieces. Crush the garlic. Roughly chop the sorrel. Cut fish into large bite sized pieces.
Bring a frying pan to a medium to high heat with a generous drizzle of olive oil, the carrot and onion. Sauté for 5 minutes. Pour the reserved potato water over and add the sorrel. Season with salt and pepper. Cook for 2 - 3 minutes before stirring the Philadelphia through. Add the fish, stir well and quickly remove from heat.
Feel free to use what works… Two ramekins, oven proof bowls or a loaf tin. Divide fish evenly, then top with mash. Place in the oven for 15 - 20 minutes until lovely and golden on top.
Spoon onto plates if you've used one large bake dish, other wise serve in the ramekins!
