SUNDRIED TOMATO & SPINACH STUFFED CHICKEN WITH OVEN CRISPS

Free range chicken breasts stuffed with sundried tomato, baby spinach and mozzarella cheese! Need we say more? YES, delicious 30 minute oven crisps! 

30 Minutes. You just know this is going to be good!

Serves 2

Ingredients

2 x 180g Australian free range chicken breast
1/4 cup sundried tomatoes
1/2 cup shredded mozzarella
1/2 cup baby spinach
400g desiree potatoes 

Preheat oven & prepare chips

Preheat oven to 200ºC on fan bake. Cut potatoes into 0.5 cm slices. Place a single layer on a lined baking tray. Drizzle with olive oil, season with salt and pepper. Place in the oven on middle rack and cook for 25 minutes until golden and crisp.

Prepare the chicken
Roughly chop the spinach and semi sundried tomato. Combine in a bowl with mozzarella. Season with salt and pepper. Using a sharp knife, lay the chicken breasts flat and slice horizontally on the side to create a pocket for the mixture. Tightly fill each breast with the mixture then pin the openings together with a couple of toothpicks. Lightly brush or spray with olive oil.

Cook chicken
Heat a large non-stick fry pan to a medium to high heat with a drizzle of olive oil. Place chicken into the pan and cook for 2 minutes each side. Transfer to a lined bake tray and place in oven for 8 -10 minutes. Remove and set aside.

To serve
Remove toothpicks from chicken then plate with chips.
