This super easy Asian chicken slaw is so good you’ll want to lick the bottom of the bowl. Made from scratch and on the table in just 20 minutes! Why wouldn’t you?! 

20 Minutes. A quick and healthy Asian style chicken dinner.

Serves 2


2 x 180g Australian free range chicken breast
2 spring onions
1 long red chilli
3 sprigs coriander
1 carrot
1/4 Chinese cabbage
Premixed dressing:
1 tablespoon soy sauce, 1 tablespoon rice wine vinegar, 1 teaspoon honey, 1 tablespoon sesame oil

Prepare & cook chicken
Combine chicken with a drizzle of olive oil, salt and pepper. Heat a large non-stick fry pan or grill pan to a medium to high heat. Place chicken into the pan and cook for 8 minutes, turning every 2 minutes. Remove from the pan, cover with foil and rest.

Make salad
Finely slice the spring onion. Peel and grate the carrot. Roughly chop the coriander. Finely shred the Chinese cabbage (use a mandolin if you have one). Combine in a bowl. Whisk premixed dressing with finely chopped chilli (to your taste). Toss dressing through veg and season with salt and pepper. 

To serve
Finely slice chicken and combine with salad. Serve and enjoy!
